RAWsome Egg Salad for sandwiches, salads, wraps, toast, etc! The possibilities are truly endless... and eggless!
Makes 4 servings:
For the food processor:
1 1/2c raw cashews
3/4 c coarsely chopped young coconut meat
3 tbsp fresh squeezed lemon juice
3 tbsp coconut aminos*
1 tsp ground turmeric
1/2 tsp sea salt or chef’s salt**
1/2 tsp freshly ground black pepper
1 garlic clove
For finely chopping:
1/2 c young coconut meat***
1/2 c celery
1/2 c bell pepper of choice
1/2 c fresh parsley
1/4 bunch fresh chives
* I prefer Coconut Secret, Big Tree Farms, or Trader Joe’s coconut aminos, as the Bragg’s brand is too salty for the recipe.
** I use Icelandic sea salt or Maldon’s salt for all my recipes. You may need to add more salt to taste, as these salts are more mild!
*** I buy whole coconuts at Mother’s Market in Signal Hill or in bulk at Kim Long Market in DTLB. Simply crack the shell open and use a firm spoon to scrape meat from inside! A Coco-jack makes this easiest, but a cleaver or kitchen knife used with care works well! Enjoy the fresh coconut juice! Or, you can buy pre-scraped coconut meat from Mother’s, however it’s not as tender and “eggy” as the fresh coconuts, so if you opt for this, do an even more fine chop for better texture, as store-prepared coconut meat is much firmer. I do not recommend using frozen coconut meat intended for smoothies.
METHOD:
In a food processor (you can use a blender if you do not have a processor, just keep a close eye on texture), combine cashews, coarsely chopped coconut meat, lemon juice, coconut aminos, turmeric, salt, fresh pepper, and garlic. Process until smooth.
Take processed mixture into a mixing bowl, and fold or stir in finely chopped coconut, celery, bell pepper, parsley, and chives until evenly mixed together.
Lick the spoon and check flavor to add any more salt and pepper!
Serve on lettuce boats (raw vegan), sandwiches (vegetarian), toasts (vegan), scooped into halved avocados (keto), or eat straight up!
Garnish with paprika, halved cherry tomatoes, or a parsley sprig!
